Spontaneous Ale Fermented with Native Yeast
In collaboration with Gracie’s Farm on the BlueSky Lodge property, with a percentage of proceeds to benefit Saving Gracie Foundation.
Our first Spontaneous Ale, fermented beginning in October 2021, in the traditional Lambic brewing process. We parked our koelschip full of wort overnight at the Three Sister’s garden at Gracie’s Farm, where airborne yeasts and bacteria from their beautiful garden naturally inoculated this beer, creating a spontaneous fermentation. It aged for almost two years in oak barrels and is finally ripe for harvest. Aromas are ripe apricot, orange, and lemon zest, and a true hay-like barnyard funk. The beer drinks sour without being overly tart.
