TWO YEARS later… Introducing Three Sisters, in collaboration with Gracie’s Farm, with a percentage of proceeds to benefit Saving Gracie Foundation.
Our first Spontaneous Ale, fermented beginning in October 2021, in a traditional lambic brewing process. We parked our koelschip full of wort overnight at the Three Sister’s garden at Gracie’s Farm, where airborne yeasts and bacteria from their beautiful garden naturally inoculated this beer, creating a spontaneous fermentation. It aged for almost two years in oak barrels and is finally ripe for harvest.
Aromas are ripe apricot, orange, and lemon zest, and a true hay-like barnyard funk. The beer drinks sour without being overly tart. Flavors mingle like a fruit cup; our notes are overripe orange, underripe cantaloupe, pear, and a subtle cherry tartness. The wild side of this beer puts forward a soft earthy funk that blends harmoniously with a smooth oaky flavor.
Local watercolor artist Lexi Dowdall beautifully captured the vivacious essence of Gracie’s Farm in the Three Sisters’ label.
